Air Fryer Jerk Chicken
This air fryer jerk chicken gives you everything you love about the real thing — deep, smoky heat, charred edges, that unmistakable pimento-and-thyme aroma — without firing up a grill or heating the whole kitchen. A proper homemade jerk marinade (scotch bonnet and all), a clever two-step seasoning trick, and 35 minutes in the air fryer. It’s high-protein, naturally gluten-free, and honestly better than takeaway.

Why you’ll love it
- Authentic flavour — real scotch bonnet, pimento (allspice) berries, scallion and thyme, blended fresh.
- Crispy, charred edges the air fryer does beautifully — no grill needed.
- High protein — around 30g per serving.
- Feeds the family — one chicken, about 12 pieces, serves 4.
- Meal-prep friendly — marinate overnight, leftovers keep for 3 days.
The secret: season twice
Here’s the trick that makes the difference — before the wet marinade goes on, coat every piece in dry allspice/jerk seasoning first and mix well. That base layer gets right into the meat, so the flavour is deep, not just skin-deep. Then the blended marinade goes on top.
Ingredient notes
- Pimento (allspice) berries are the soul of jerk — use them if you can get them; 10–15 blended in gives a flavour ground allspice alone can’t match.
- Scotch bonnet brings the heat and a fruity flavour. Want it milder? Deseed it, or use half.
- Scallion (spring onion), thyme, ginger and garlic are non-negotiable for that classic jerk backbone.
How to make air fryer jerk chicken (overview)
Blend the marinade to a fine paste → coat the chicken in dry allspice → rub in the marinade → rest 1 hour → air fry at 180°C, 20 min one side, then 15–18 min the other, brushing with a little more marinade when you turn. Full amounts and steps are in the recipe card below.
Air fryer tips
- Single layer, don’t crowd — cook in batches so it chars instead of steams.
- Skin-side down first, then flip.
- Check it’s cooked: chicken must reach 75°C internal — grab an instant-read thermometer.
- Cut the smoke: jerk marinade has sugars and oils that can smoke — pop 1 tbsp of water in the drawer under the basket.
What to serve it with
Classic is rice & peas, but it’s gorgeous over mash with the pan juices too (both pictured below). Want a whole week of high-protein dinners sorted without the planning?
Storing & meal prep
Keeps in the fridge for 3 days. Reheat 3–4 minutes in the air fryer to bring the crisp back. The marinade is even better made a day ahead.
FAQ
- How spicy is it? Medium-hot with a whole scotch bonnet. Deseed it or use half for a gentler heat.
- Can I use chicken breast? You can, but bone-in, skin-on thighs and legs stay much juicier in the air fryer.
- What is pimento? Allspice berries — the signature jerk spice. Ground allspice works if you can’t find the berries.
- Can I use frozen chicken? Thaw completely and pat dry first, or the marinade won’t cling and char.
- No air fryer? Roast at 200°C for 40–45 minutes, turning once.
- Can I make it ahead? Yes — marinate overnight in the fridge for the best flavour.
